    I have the same problem from a MacBook PRO ( Big SUR ) with a brand new HP color laser Pro MPF M283. The primary reason I have Acrobat DC is to scan to PDF - and now that function does not work anymore. Scanner is fine - works with other programs. ADOBE used to work with old Brother multifunction printer -but stopped as soon as I switched printers. And no - there is NO setting within HP that allows any color format adjustment. The scanner and Adobe are capturing in JPG2000 - there is a disconnect on ADOBE side.
