Acrobat 2017 Pro was the best UI. I rarely ever want to see the new UI, and always use "View>Disable New Acrobat"

Same. I signed up to this forum solely to vote this. I just opened Acrobat DC 2025 and the whole workspace was scrambled. Thankfully, "View>Disable New Acrobat" still works. Please never remove it.

The fix for this is currently:
    View>Disable New Acrobat.

The moment Adobe removes this option I will jump ship to another editor like BlueBeam.

Acrobat 2017 pro had the perfect UI, and I don't need anything changed from that

I use this feature all the time, Under File>Properties>Initial View to enable or disable Bookmarks Panel + Page when sending large documents to clients. I want my clients to have easy access to my navigation links. When I send a document that requests bookmarks to be opened, I like that they will show up in adobe reader automatically.
I believe you can fix it on your end if you hate it by just setting initial view not to pop up the bookmarks panel...
