that is totally possible yes. I do things like that all the time.
create PDF, then "Prepare form" - Full Acrobat of course. -

June 2021, and still Adobe are lagging so far behind in the document signing space.
Their fee is the highest too, so really, no excuses about resources, is about resource allocation!
You could be so great Adobe, you could be the king of editing PDFs, but reading this uservoice channel, and ending here with this one, there are so many low hanging fruit for you to get - like this, but you need to focus on this product!
