object to requesting my birthdate at login
I object to you collecting my birthdate as a requirement to log in. It's easily possible to use some other information to authenticate me. I do not trust Adobe to keep my information confidential, because frankly, you lack imagination for not using another shared secret. Adobe is not authorized to use my birthday for any other purpose.

I agree. It's an unnecessary invasion of the users' privacy.
So much so that I'm considering uninstalling Adobe Acrobat and moving to another software, less invasive! -

I completely object to collecting sensitive data!!! Unless my company changes it's policies and uses another tool, I will not be using Adobe.
