Double popups when extracting pages
Open a multi-page document. Go to the "Organize pages" tool. Right click a page thumbnail in the righthand view. In the popup menu, click "Extract Pages". A dialog window pops up where you can select the page to extract, whether to delete the extracted page, and whether to extract each page as a separate document. After a moment, a second popup appears on the tool pane, with a duplication of the latter two options.
The Acrobat team really, really likes popups, eh?

Most annoying of all, it assumes you only want to extract the single page you're on when you click Extract. You have to click-out of the pre-selected page to add other pages, then re-click the Extract icon, then click the big blue Extract button. All this excessive clicking makes me wonder just how heavily invested Adobe is in mouse manufacturers.
